Courtney: Rainbow Surprise Cake!

It was my 25th birthday last month (I'm OLDDDD! Lol) and my Mummy slaved all day in the kitchen to make me this A M A Z I N G cake!
It was lemon flavour, with lemon buttercream and raspberry jam (my favourite flavour - after chocolate of course), with the layers all dyed to make a rainbow! The top layer was multi-coloured marble-y effect. If you're using liquid food colouring, don't add too much, because it can make the cake batter too liquid-y and may effect the texture of the cake.
To make the special surprise inside, simply use a cookie cutter to cut holes in each layer, apart from the top one. Stack them as you would normally, and before you put the top layer on, pop in your choccies! You could maybe even put a small pressie in there, how cool would that be??
I had an amazing birthday weekend, I went to a spa and had a massage, I went to a Chocolate Festival and I went to a bar, and my cake was the icing on the cake (feel free to groan at my very bad joke lool), so thank you Mummy!

ReplyDeleteI made my boyfriend a rainbow cake like this a couple of years ago for his birthday, but putting the chocolate inside is such a good idea! Will be doing that next time a make a cake!
